Lemon Herb Vinaigrette Recipe

The lemon herb vinaigrette is one you’ll want to make.  It adds both flavor and a host of nutritional benefits to any bowl of greens you toss it with.

  • Fresh Lemon Juice and Zest. Lemon adds a fresh perky flavor to this vinaigrette.
  • Herbs. We use both fresh flat leaf parsley and cilantro for this recipe.  You can add fresh basil to the mix as well, or substitute the cilantro with basil if you’re ot a fan of cilantro.
  • Honey. Honey adds a little sweetness to balance out lemon’s tartness. 
  • Mustard.  Mustard helps to emulsify the vinaigrette and it adds a bit of flavor. 
  • Garlic. We use just one clove of garlic for this recipe, so the garlic flavor is mild. If you don’t care for garlic, then leave it out, and if you love garlic, then add more to your personal preference.
  • Olive Oil. Use a good extra-virgin olive oil for this vinaigrette

How to Make Fresh Herb Vinaigrette

This lemon herb vinaigrette comes together in about 5 minutes start-to-finish.

  1. Blend. Add everything to a blender and blend until creamy. 
  2. Whisk. If you don’t have a blender, or if you want to dirty one up, then chop the parsley and cilantro (coarsely or fine – doesn’t matter) and whisk everything together in a bowl.
  3. Shake. Add everything to a mason jar, seal the lid, and shake some sense into it. 
  4. Storage. Store the vinaigrette in an airtight container in the refrigerator. If properly stored, the vinaigrette should last up to one week.

Ingredients

  • 3/4 cup extra-virgin olive oil
  • juice of 2 lemons
  • 1 heaping teaspoon lemon zest
  • Fistful fresh cilantro
  • Fistful fresh parsley
  • 1 garlic clove, peeled and minced
  • 2 teaspoons pure clover honey
  • 1-1/2 teaspoons Dijon mustard
  • freshly ground black pepper and salt to taste

Instructions

  1. Blend all ingredients in a blender. If you don't have a blender, then chop the herbs and add the ingredients to a mason jar and seal the lid. Shake well.
  2. Store in an airtight container in the refrigerator. If properly stored, the vinaigrette should last up to one week.
