I love everything about this strawberry balsamic vinaigrette! It’s light and delicious and it’s pretty much a staple in my home during the spring and warm summer months.

This strawberry balsamic salad dressing is one of my favorite dressings to make during the summer.  It’s bright and flavorful and makes perfect festive dressing to serve at birthday parties, baby showers and summer potlucks and backyard barbecues. 

Strawberry Vinaigrette Recipe

This is a simple strawberry salad dressing to make, and if you love strawberries, this dressing just might be your new favorite! 

  • Strawberries. We use fresh juicy ripe strawberries for this recipe, but you can use frozen strawberries as well. Just make sure to thaw them completely before blending them.
  • Olive Oil. We use a light olive oil for this dressing because the flavor is more mild than extra-virgin olive oil.
  • Vinegar. This is the key ingredients, so be sure to use an affordable high quality Balsamic Vinegar. This recipe uses aged balsamic vinegar, which has a thicker and more velvety consistency than regular balsamic vinegar.  The acidity of your vinegar will affect the flavor of your vinaigrette. As long as you like the flavor of the vinegar, it will likely make a good vinaigrette. If you use a very acidic vinegar, you’ll want to add more honey to mellow it out. Aged balsamic vinegar has a smooth mellow and slightly sweet flavor. I use Colavita Aged Balsamic Vinegar of Modena for making dressings with.
  • Sweetener. We use a little pure clover honey to add a hint of sweetness to this dressing. 
  • Lemon Juice. A little lemon juice goes nicely with the strawberries, 
  • Seasoning. We use just a pinch of salt and pepper to season this dressing, 
  • Herbs. Sometimes I like to stir in about 1 tablespoon of finely chopped basil leaves to the mix, but this is optional.

How To Make Strawberry Vinaigrette

  1. Blend ingredients. Add the ingredients (except the basil) to a blender and blend until smooth and creamy. If adding the basil, finely chop the leaves and stir into the dressing.
  2. Chill. Refrigerate the dressing up to an hour before serving so the flavors have a chance to blend together.

Serving Suggestions

I love to toss this strawberry salad dressing with a simple salad made up of baby arugula and mixed berries,but a it goes well with just about any salad you want to toss it with.

Ingredients

  • 1-1/2 cups fresh strawberries, cored and sliced in half
  • 1/4 cup Balsamic vinegar
  • 1/2 cup light olive oil
  • 2 tablespoons pure clover honey
  • 1 tablespoon lemon juice
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked pepper
  • 3 Basil leaves, chopped, optional

Instructions

  1. Add the ingredients (except the basil) to a blender and blend until smooth and creamy. If adding the basil, finely chop the leaves and stir into the dressing.
  2. Transfer dressing to an airtight container and refrigerate up to an hour before serving so the flavors have a chance to blend together.

Notes

You can use frozen strawberries if you like. Just make sure they are completely thawed first though.
