What Is Garlic Aioli?

Classic garlic aioli is made by emulsifying garlic with olive oil. The word “aioli” comes from “ail” which is French for “garlic” and “oli” is Provencal for “oil”. Aioli is popular in parts of the Mediterranean, especially in Provence and other parts of Southern France, as well as Spain.

Garlic Aioli Recipe

This recipe for garlic aioli couldn’t be any easier to make. There’s not much to it, other than measuring out the ingredients, mincing the garlic, and stirring it all together with a fork or spoon. 

  • Mayonnaise.  We use Best Foods (I think its called Hellman’s on the East Coast), but you can use an olive oil mayonnaise or vegan mayo if you prefer.
  • Garlic. Garlic adds so much flavor to this aioli.
  • Lemon Juice. Just a little freshly squeezed lemon juice adds a perky flavor to the mix.
  • Seasoning.  Add just a pinch of freshly cracked black pepper to taste.

How To Make Garlic Aioli

This recipe is a simple one to make. I recommend making it in advance so the flavors have a chance to really meld together in the refrigerator.

  1. Measure Ingredients. Measure the mayonnaise and add it to a small mixing bowl.
  2. Mince Garlic. Use a garlic press or finely grate the garlic so the garlic pieces are very small and juicy. This will allow for better distribution of garlic flavor through the mayo. 
  3. Stir Ingredients. Stir together the mayonnaise, garlic, lemon juice and pepper using a fork or a wire whisk until well blended.
  4. Refrigerate. Place plastic wrap tightly over the bowl and refrigerate for up to an hour before serving (longer is even better) to allow the flavors to blend together.

How To Store It

Because this homemade Garlic Aioli is made with mayonnaise, it will need to be placed in an airtight container and stored in the refrigerator where it will last up to 7-10 days. The flavors just get better after a day or two. Be sure to stir again before serving.

Ingredients

  • 1 cup real mayonnaise
  • 2 garlic cloves, peeled and minced
  • 1 tablespoon lemon juice
  • Pinch of freshly ground black pepper

Instructions

  1. Add the mayonnaise to a small mixing bowl.
