Mexican Avocado Chicken Burgers
These Mexican Avocado Chicken Burgers are perfect for summer and will bring a fun twist to your backyard grilling plans. These ground chicken burgers are moist and flavorful and you really need no bun at all!
If you love avocado, you’ll love these avocado burgers! They’re made with ground chicken, avocado, cilantro, green onion, your favorite salsa and Mexican seasoning, and they make the best chicken burger that’s perfect for summertime backyard barbecues.
I made these avocado burgers for the first time about a month ago, and I’ve made them a few times since. I’ve made them fajita-style with grilled onions and bell pepper and red peppers over the top (which is awesome) and I made them with a little added corn and black beans to the burger mix (also delish). I slathered them with guac and then with adobo mayo. This is a really versatile recipe that you can have fun playing with and making it your own. The added salsa in the mix is to keep these burgers from drying out. It also adds a nice flavor.
Healthy Chicken Burger Recipe
- 2 tablespoons extra-virgin olive oil for brushing grill
- 1 pound ground chicken
- 1/2 teaspoon dried oregano
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- 1/3 cup mild salsa
- 1 avocado, peeled, seeded and chopped
- 1 green onion, finely minced
- 1 tablespoon fresh cilantro, finely chopped
- freshly ground black pepper and pinch of sea salt
How To Make Chicken Burger
- Pre-heat grill. Brush grate with oil.
- In a large bowl, gently combine the ground chicken with salsa, spice mixture, avocado, onion and cilantro.
- Form into 4 equal size patties
- Place patties on grill. Cover and cook 4-5 minutes on each side.

Variations

- Add corn and/or black beans to the mixture before grilling
