How to Make Chili

- Cook aromatics – Heat the olive oil in a large Dutch oven over medium-high heat. Add chopped onion to pan and cook for about 5-6 minutes or until tender, stir frequently. Stir in the green onion and garlic and cook for another 2-3 minutes, stir frequently
- Add seasoning – Add cumin, coriander, and ground oregano. Stir to blend.
- Stir in green chiles – Add the canned green chiles and cook for another 2-3 minutes.
- Pour in beans and broth – Pour in the cannellini beans, chicken broth and water. Bring to a simmer then reduce heat.

- Simmer – Cover and simmer on low for 20-30 minutes.

- 2 pounds boneless chicken breast, cut into bite-sized pieces
- 2-3 tablespoons extra-virgin olive oil
- 2 cups finely chopped onion (1 large onion)
- 3 green onion, sliced whites and light green parts
- 2 garlic cloves, finely minced
- 1-1/2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground oregano
- 1 4.5-ounce can chopped Ortega green chiles, drained
- 2 15.5-ounce cans cannellini beans, drained
- 1 14-ounce can low-sodium chicken broth
- 1 cup water or more chicken broth
