This white bean chili recipe is made with basic ingredients (chicken, canned cannellini beans, canned green chilies, broth, onion, garlic and seasoning).
- Cooked boneless chicken breast, cut into bite-sized pieces
- Extra-virgin olive oil
- Onion
- Garlic
- Ground cumin, coriander and oregano
- Canned green chiles
- Cannellini beans
- Low-sodium chicken broth
How to Make Chili
This easy recipe comes together in about 40 minutes (start to finish).
- Heat the olive oil in a large Dutch oven over medium-high heat.
- Add chopped onion to pan and cook for about 5-6 minutes or until tender, stir frequently.
- Stir in the green onion and garlic and cook for another 2-3 minutes, stir frequently
- Add cumin, coriander, and ground oregano. Stir to blend.
- Add the canned green chilies and cook for another 2-3 minutes.
- Reduce heat to low and add the cannellini beans, chicken broth and water.
- Bring to a simmer then reduce heat.
- Add the cooked chicken.
- Cover and simmer on low for another 15-20 minutes.
