I love my pesto (pistou), whether it’s made with basil, arugula or cilantro….and the more garlicky the better.  But….I’m new to chimichurri sauce.  I had it for the first time just a couple of weeks ago.  A friend at work introduced me to it and I’ve been totally obsessed with it ever since.

I add it by the spoonfuls to my soups (it’s especially awesome stirred into lentil soup), and it goes great with chicken and salmon, or slather it on crostini.  This Chimichurri Sauce is made with both parsley and cilantro, and it has a mild kick to it due to the added crushed red pepper.  I went relatively light on garlic here, so if you love a good garlicky bite…feel free to add an extra clove or two.  In addition to the great taste of this chimichurri sauce….it’s loaded with immune boosting, cancer fighting, detoxifying properties.

CHIMICHURRI SAUCE INGREDIENTS

  • 1 cup flat-leaf parsley, chopped
  • 1 cup cilantro, chopped
  • 1/3 cup red wine vinegar
  • 4 garlic cloves, minced
  • 2 tablespoons red bell pepper, chopped
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 teaspoon crushed red pepper flakes
  • 1/2 cup extra-virgin olive oil

HOW TO MAKE CHIMICHURRI SAUCE

  1. Place all of the ingredients in a food processor and blend for about 10-15 seconds on medium speed, or until ingredients are evenly blended.
