Watermelon Popsicles Recipe

These Watermelon Popsicles are seriously habit forming! And this is my favorite popsicle recipe to make during the warm summer months! We basically use the same recipe that we use to make this Watermelon Juice, only we just freeze it in popsicle molds.

  • Watermelon, peeled and chopped (seeds removed)
  • White grape juice (unsweetened)
  • Apple juice (unsweetened)

How to Make Watermelon Popsicles

This is going to be your new favorite recipe for watermelon popsicles. It’s so easy and they’re so good! To make these Watermelon Popsicles, we simply toss everything in a blender and blend until the watermelon liquifies.

  • Prepare watermelon:  Remove rind and chop watermelon.
  • Blend watermelon:  Add watermelon to blender and blend.
  • Strain Watermelon. Strain watermelon juice using a fine mesh strainer then return juice to blender.
  • Add fruit juice: Pour the white grape juice and apple juice in the blender with the watermelon juice and blend the three juices together.
  • Freeze popsicles:  Divide juice among the popsicle molds.  Leave a little space at the top allowing the popsicles room to expand. Place in the freezer for about 1-1/2 to 2 hours then remove and place popsicle sticks in the molds and return to the freezer.  Freeze for another 6-8 hours, or overnight, until popsicles are frozen solid.
  • Serve popsicles:  Run the sides and bottoms of the popsicle molds under warm-hot water for a few seconds so the popsicles will easily release from the mold.

Personally, I never strain my watermelon juice for these popsicles, because I want the added nutritional value the flesh of the watermelon provides, and I don’t mind the added texture.

If you don’t strain the watermelon juice, then just blend the three juices together and pour in the popsicle molds and pop in the freezer. At the time you insert the popsicle sticks, stir the liquid in the molds so the watermelon pulp won’t all sink to the bottom of the mold.

Tips

  • Be sure to remove all the seeds before blending the watermelon, or choose a seedless watermelon for this recipe.
  • I like to use RW Knudsen brand of natural fruit juices for this recipe. Whatever brand you choose, just be sure to use an unsweetened juice without added sugar.
  • Leave a little space at the top of the popsicle mold when you pour the juice into the molds. This allows a little room for the popsicles to expand.
  • If you go the easier route and don’t strain the watermelon juice,  then at the time that you insert the popsicle sticks into the molds, just stir the liquid in the molds so the watermelon puree won’t separate from the juice and sink to the bottom of the molds.
  • These watermelon fruit popsicles will keep in the freezer for up to 2 months.

Picking a Watermelon

Here’s a few tips for picking a watermelon that you’ll enjoy.

  • Rind health. You’ll want to look for a watermelon with a flat matte rind rather than a glossy or shiny rind.
  • Yellow field spot. Look for the yellow field spot on the bottom of the watermelon. This is where the watermelon laid on the field and the yellow color indicates ripeness (and that it ripened in the field).
  • Weight. Heavier watermelons are often juicy watermelons. Pick up different watermelons in the bunch to choose one on the heavier side for its size.

Watermelon Health Benefits

  • Hydration. Watermelon is comprised of 92% water, so it’s perfect to add to your daily water intake. Staying hydrated helps regulate body temperature and it helps to delivery nutrients to every cell in our body.
  • Rich with Antioxidants and Anti-inflammatory Properties. Watermelon is a good source of vitamin C, carotenoids and lycopene, which are powerful antioxidants.  Inflammation is a leading cause of many chronic diseases. The antioxidants found in watermelon may help lower inflammation and oxidative damage in our bodies. (1)
  • May Help Lower Blood Pressure and Cholesterol. The lycopene found in watermelon may help lower blood pressure and lower cholesterol. Watermelon also contains the amino acid citrulline which may increase nitric oxide levels in our bodies which helps blood vessels to expand and lowers blood pressure. (2)
  • Good Source of Essential Vitamins and Minerals. Watermelon is a good source of potassium, magnesium and vitamin A.
  • Aids Digestion. The high water content and small amount of fiber found in watermelon may aid digestion.
