Zucchini Fries Recipe Ingredients
- Zucchini. You’ll need 3 medium size zucchini for this recipe.
- All Purpose Flour. The zucchini fries are tossed in all purpose flour before coating them in egg and the bread crumb mixture.
- Eggs. We coat the zucchini pieces in egg before coating them in the bread crumb mixture.
- Plain Bread Crumbs. We use plain bread crumbs, but you can use panko bread crumbs if you like.
- Parmesan Cheese. We mix the parmesan cheese with the bread crumbs and some lemon zest to make a delicious coating. After the zucchini fries come out of the oven, we sprinkle them with more parmesan cheese and lemon zest making them extra tasty.
- Seasoning. We use a simple seasoning mix of onion powder, garlic powder and Italian seasoning.
- Salt. Sprinkle the zucchini fries with salt when they come out of the oven instead of extra parmesan cheese.
- Lemon Zest. Don’t skip the lemon zest. It gives these zucchini sticks and perky lemony flavor that compliments the zucchini.
- Olive Oil. We drizzle olive oil over the coated zucchini before placing them in the oven. This will help create an oven-fried affect making them crispy and preventing them from drying out while in the oven. We use a silicon brush dipped in the oil and then drizzled over the zucchini sticks.

How to Make Zucchini Fries
- Preheat oven to 425°F.
- Prepare Zucchini. Cut the ends off each zucchini and then slice them in half lengthwise and then slice each piece in half lengthwise again so you have four zucchini sticks from each whole zucchini. Pat each zucchini stick dry with paper towels.
- Dredge the zucchini sticks in flour, then dip into the egg mixture and roll them in the seasoned bread crumb and parmesan mixture. Arrange the sticks in a single layer on the baking sheet. Using a silicon brush dipped in olive oil, lightly drizzle the oil over the zucchini sticks. You can use a spoon to drizzle the oil, or use spray oil if you like.
- Put the baking sheet in the oven and bake for 18 to 20 minutes, or until the zucchini fries are golden brown. Rotate the tray midway through cooking so the fries cook evenly.
- Remove from oven and sprinkle with remaining parmesan cheese and lemon zest.
- Store leftovers in an airtight container in the refrigerator. If properly stored, they should last 2-3 days.

- Pat the cut zucchini pieces dry with paper towels to remove excess moisture.
- To cut down on a mess, rather than dirtying bowls, measure out the flour on a piece of parchment paper and then the breadcrumbs and parmesan mixture on another piece of parchment paper. After you have coated the zucchini sticks in each, just toss the parchment paper in the trash.
- Lightly coast the zucchini pieces in the flour and breadcrumb parmesan mixture. You may need to gently press some of the breadcrumbs onto the zucchini to get them to stick.
- Depending on thickness of the carrots and the temperature of your open, roasting time may vary.

- Zest of 1 lemon, divided

- 1/2 teaspoon black pepper
- 1/4 cup olive oil
Instructions
- Preheat oven to 425°F.
