  • Baking Powder. Make sure you have fresh baking powder for this recipe so your cornbread gets nice and tall.
  • Sugar. We add granulated sugar for the sweetness in this cornbread.
  • Salt. Use table salt for this recipe.
  • Eggs. You’ll need 4 large eggs.
  • Milk. Use whole milk for this recipe.
  • Pure Vanilla Extract. We add a little pure vanilla extract to add a hint of flavor to the mix.
  • Oil AND Butter. We use both light olive oil and melted butter for this cornbread recipe. You can use vegetable oil if you like.

How To Make Sweet Cornbread

  1. Preheat Oven. Preheat oven to 350 degrees. Grease one 9″ x 12″ x 3″ ” baking dish.
  2. Whisk Together Wet Ingredients. Whisk together the eggs, milk, vegetable oil and cooled melted butter. 
  3. Combine Dry Ingredients. In a large bowl, combine the flour, cornmeal, baking powder, sugar and salt. 
  4. Blend Ingredients. Stir in Add the dry ingredients into the wet ingredients a little at a time until its all well incorporated. Don’t over mix the ingredients.
  5. Bake In Oven. Melt 2 tablespoons butter and add it to the baking dish. Brush the melted butter all along the inside of the pan. Pour the batter into the baking dish and even the batter out. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cornbread comes out clean and dry. Remove from the oven, and leave the cornbread in the pan to cool for 10 minutes.
  6. Serve. Cut into 12 pieces and serve with butter.

Tips For Making The Best Sweet Cornbread

  • Don’t over-mix the batter.
  • Halfway through baking, rotate the pan in the oven so it bakes evenly.
  • Keep an eye on the cornbread at the 20 minute mark to make sure it doesn’t get over done. To check for doneness, stick a toothpick in the center of the bread. If the toothpick comes out clean and dry, it’s done and you can remove it from the oven. Let it rest in the pan to cool for 5-10 minutes before cutting into it.

Ingredients

  • 4 eggs, beaten
  • 2-1/2 cups whole milk
  • 1 teaspoon pure vanilla extract
  • 2/3 cups light olive oil or vegetable oil
  • 1/2 cup plus 2 tablespoons butter, melted
  • 3 cups all-purpose flour
  • 1 cup fine yellow cornmeal
  • 2 tablespoons baking powder
  • 1 teaspoon table salt
  • 1-1/2 cup granulated sugar

Instructions

  1. Preheat oven to 350°F degrees. Grease one 9" x 12" x 3" " baking dish.
  2. Whisk together the eggs, milk, vegetable oil and 1/2 cup cooled melted butter. 
  3. In a large bowl, combine the flour, cornmeal, baking powder, sugar and salt. 
  4. Stir in the dry ingredients into the wet ingredients a little at a time until well incorporated. Don't over mix the ingredients.
  5. Add the remaining 2 tablespoons melted butter to the baking dish, and brush the melted butter all along the inside of the pan. Pour the batter into the baking dish and even the batter out using a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cornbread comes out dry and clean. Remove from oven and leave the cornbread in the pan to cool for 10 minutes before cutting into it.
  6. Cut into 12 squares and serve with butter.
