A slushie (also spelled slushy) is a carbonated or non-carbonated beverage made with flavored ice that is also called a slush, frozen drink, frozen beverage and sometimes a slurpee. 

Cucumber Slushie Recipe

This cucumber slushie recipe is my riff on a frozen treat that a local restaurant serves. 

  • Cucumber 2 cups seeded cucumber
  • Lemon-Lime Soda (Sprite or  7-Up)
  • Lime juice
  • Ice

Variations

  • Instead of using lemon-lime soda, blend frozen cucumber with sparkling water and a tablespoon of honey, or lemonade, limeade or ginger ale.

How To Make Cucumber Slushie In A Blender

After you freeze the cucumber chunks, this homemade slushie comes together in about 5 minutes.

  1. Freeze Cucumber. Peel and remove seeds of cucumber and chop into chunks. Place the cucumber chunks in a single layer on a baking sheet, then put baking sheet in the freezer for 1 hour until the chunks are frozen. When frozen, remove from freezer and let sit for about 2-3 minutes.
  2. Blend. Combine the frozen cucumber chunks, soda and juice in a blender and blend until smooth. With the motor still on, add ice cubes 1 at a time and blend until smooth. Serve right away.
  3. Serve Immediately. Garnish with fresh mint and serve immediately with a straw or a dessert spoon.

How To Freeze Cucumbers

Here’s a quick how-to for freezing cucumbers for later use. 

  • Mark Date On Freezer Bag. Using a Sharpie marker, label freezer bags with the date.
  • Peel Cucumbers.  Peel cucumbers, slice in half lengthwise and scrape away any seeds using a spoon. If freezing English cucumbers, there’s no need to remove the seeds since they are so small and there are so few of them. Chop cucumber into chunks. 
  • Freeze Cucumbers. Lay the cucumber chunks on a cookie sheet in a single layer and place in the freezer for about 1 hour. Transfer the frozen cucumber chunks to an air-tight freezer bag or container and store in the freeze.

How Long Do Frozen Cucumbers Last In The Freezer?

If properly stored, frozen cucumber can last in the freezer up to 6 months.

What Type Of Cucumber Should I Use?

The best cucumbers to use for this Cucumber Slushie are English cucumbers.  They have tiny seeds and very few of them,  and English cucumbers tend to have a more pleasant taste than the slicing or garden variety.

Cucumber Varieties

There are many varieties of cucumbers. Cucumbers that you eat fresh are typically classified as slicing cucumbers and other cucumbers with their thick and bumpy skins are most often used for pickling. English cucumbers are usually a little more expensive than garden cucumbers, but with English cucumbers you can consume the peel and tiny seeds and enjoy all the fiber and nutrients they provide.

  • American â€“ The typical cucumbers found in the grocery stores are American cucumbers (also called slicing cucumber and garden cucumber). They have a thicker and darker green skin which is bitter tasting. They have a softer texture flesh with many large seeds that can give the flesh a slightly bitter taste. It’s best to peel them and scrape away the seeds before consuming.
  • English â€“ English cucumbers are also called hothouse, greenhouse, seedless, burpless and European cucumbers. They are long with dark green skins that have distinct ridges running lengthwise. They have tiny seeds so the  flesh (and skin) don’t taste bitter like the garden cucumber does. Cucumbers are a member of the cucurbitaceae family (gourd family), which includes zucchini, squash, melons and pumpkins. Botanically speaking, cucurbits are actually a type of fruit. Most cucurbits are herbaceous tendril-bearing vines that are commonly grown in warmer climates.
  • Persian â€“ Persian cucumbers are similar to English hothouse cucumbers in taste and texture, but they’re about half the size. Both of them are crunchy, have thin skins, few seeds and they are mild tasting. Neither of them need to be peeled before consumin

Choosing the Best Cucumbers

When you’re choosing the best cucumbers to buy, always look for firm cucumbers that are free of soft spots, cracks or withered and shriveled ends. The skin should be a rich green rather than a pale green.
