Chipotle Aioli
This Chipotle Aioli recipe is a family favorite! It’s made with mayonnaise, chipotle peppers in adobo sauce, garlic and a little lime juice. It is a thick and creamy chipotle pepper aioli to slather on burgers, wraps, sandwiches and more.

Not only is this chipotle pepper aioli sauce great on burgers, sandwiches and wraps, but it makes a great dipping sauce to serve with chicken tenders, nuggets, fries and onion rings.

Chipotle Pepper Aioli Recipe
This chipotle pepper aioli sauce couldn’t be easier to make! There’s not much to it other than measuring out the ingredients then whisking them all together. Chill it for a bit, then slather it generously on your burger or bun and enjoy!
- Mayonnaise. Use a good quality mayonnaise like Best Foods (or called Hellman’s on the East Coast). You can also use a vegan mayo if you prefer.
- Adobo Sauce. We use canned chipotles in adobo sauce for this recipe. Just a teaspoon or two of the adobo sauce adds an amazing flavor to this aioli. I use Embasa brand canned chipotle peppers.
- Garlic. Garlic adds a lot of flavor to this sauce. We add 3 cloves, but you can start out with 1 or 2 and add more to your personal liking.
- Lime Juice. Just a touch of lime goes nicely with the smoky flavor.
- Seasoning. We add just a pinch of salt and black pepper to the mix.

How To Make Chipotle Aioli
This recipe is a simple one to make. And its a family favorite that we traditionally always have made for our burgers. I recommend making it at least 1 hour in advance so the flavors have a chance to really meld together in the refrigerator.
- Whisk Ingredients. Whisk together the mayonnaise, olive oil, lime juice, grated garlic and adobo sauce. Add more adobo sauce if you want things a little spicer. Season with a pinch of salt and freshly cracked black pepper to taste.
- Refrigerate. Transfer aioli to an airtight container and place in the refrigerator for up to an hour before serving (longer is even better) to allow the flavors to blend together.
Serving Suggestions
Slather this Chipotle Aioli on sandwiches, wraps and burgers instead of plain mayonnaise. It’s also great as a dipping sauce served with French fries, onion rings, chicken tenders, chicken nuggets, baked zucchini rounds, carrot and celery sticks, crackers and potato chips.
How To Store Leftover Chipotle Aioli
The base for this chipotle aioli sauce is made with mayonnaise, so it will need to be placed in an airtight container and stored in the refrigerator. If properly stored, it can last up to 1 week. Whisk it again with a fork before serving.
What To Do With Leftover Chipotle Peppers In Adobo Sauce
Sometimes recipes (like this one) call for chipotle peppers in adobo sauce, but you don’t typically end up using the whole can, so then we’re left wondering what to do with what’s left of them. Rather than just tossing the can in the trash, you can quickly and easily measure the remaining peppers and adobo sauce out and freeze it for later use. Here’s how:
- Prep Cookie Sheet. Line a cookie sheet with a Silpat, parchment paper or waxed paper.
- Mark Date On Freezer Bag. Label freezer bags with the date and contents of the bag.
- Blend Chipotle Peppers in Adobo Sauce. Add the leftover chipotle peppers and the adobo sauce to a small blender or food processor and blend until smooth.
- Measure Sauce. Using a tablespoon or small melon scoop, measure the blended chipotle sauce by the tablespoonfuls onto the Silpat mat, parchment paper or waxed paper. We like to measure out the tablespoonful that way when I add the paste to recipes, it’s already measured out for us. Alternatively, you can also measure the sauce into an ice cube tray.
- Freeze. Pop the cookie sheet (or ice cube tray) into the freezer for 30-45 minutes, or until frozen solid.
- Freezer Bags. Transfer the frozen scoops (or cubes) of blended chipotle sauce into the prepared plastic freezer bag. Freeze for up to 6 months.

- 1 cup mayonnaise
- 2 teaspoons light olive oil
- 2 teaspoons lime juice
- 3 large cloves garlic, grated or finely minced
- 1-1/2Â teaspoons adobo sauce
Instructions
- Whisk together the mayonnaise, olive oil, lime juice, grated garlic and adobo sauce. Add more adobo sauce if you want things a little spicer. Season with a pinch of salt and freshly cracked black pepper to taste. You can add only 1 clove of grated garlic to start with, then adjust to taste. Add another 1/2 - 1 teaspoon of adobo sauce if you want a spicier flavor. Add 1-2 teaspoons more of lemon juice if you want a tangier flavor.
- Transfer aioli to an airtight container and place in the refrigerator for up to an hour before serving (longer is even better) to allow the flavors to blend together.
