This recipe is a simple one to make and you’ll only need a few basic ingredients to make it. If you don’t already own a digital meat thermometer, we recommend getting one. You’ll want to make sure the chicken is done by checking the internal temperature in the thickest part of the meat. The USDA recommends 165°f as the safe limit, but since chicken thighs are a darker meat, the higher the temperature, the more tender the meat will likely be. You can cook the chicken until the temperature range is somewhere between 165°f to 185°f degrees. If you don’t have a meat thermometer, you’ll need to slice a piece of chicken thigh open to make sure it’s cooked through and no longer pink inside.
- Chicken. Use boneless skinless chicken thighs. If you’re using frozen chicken thighs, it will need to be completely thawed before using.
- Olive Oil. We use a little extra-virgin olive oil for this recipe.
- Lemon Juice AND Zest. You will need just 2 tablespoons lemon juice and 1 teaspoon lemon zest.

Baking boneless skinless chicken thighs couldn’t be easier! All you’ll need is a few simple ingredients and then follow these easy steps and you’ll have delicious, juicy and tender chicken on the table in about 30 minutes.
- Preheat Oven. Preheat the oven to 400°.
- Pat Chicken Thighs Dry. Pat the chicken thighs dry with paper towels before putting them in a bowl.
- Toss Boneless Skinless Chicken Thighs With Seasoning. Place the chicken thighs in a large bowl and pour the olive oil, lemon juice, lemon zest and seasoning over them. Toss the chicken thighs so they are all lightly coated with the oil, juice and seasoning.
- Bake Chicken Thighs. Leave the chicken thighs folded so they resemble chicken thighs with bones. Put the chicken thighs in an oven-proof baking dish and place in the oven uncovered. - Baste Chicken. Midway through cooking the thighs, you can remove the baking dish from the oven, and give the thighs a quick basting on top with the juices. Then return the dish back to the oven to finish cooking.
- Rest Chicken. When the chicken is cooked through, remove from the oven and let the chicken rest in the pan for 3-5 minutes before serving.
- Serve. Spoon some of the delicious juices over the chicken when serving it.
