How To Make The Best Southern Cornbread From Scratch

  1. Preheat Oven. Preheat oven to 350°F
  2. Melt Butter. In a small saucepan, melt the butter and set aside to cool. Measure 2 tablespoons of the butter and drizzle it into the 8×8″ baking pan. Brush the melted butter on the bottom and the inside of the baking pan. Set aside.
  3. Whisk Dry Ingredients Together. In a medium bowl, whisk together the flour, corn meal, baking powder, baking soda and salt.
  4. Cut Corn From Cob. Stand each corn ear on its stem and and cut down with a sharp knife to remove the kernels from the cob.  After removing the kernels, scrape the knife along the cob to extract the corn milk. You will need 1-1/2 cups of corn kernels and corn milk. Transfer 1 cup of corn kernels to a blender, reserving the rest to add to the batter.
  5. Blend Wet Ingredients Together. Add the milk, sour cream, 4 tablespoons melted butter, honey and egg to a stand blender with the corn kernels and puree.  You mill need 2 cups of this mixture. If you are shy some, you can add a little milk so you have a full 2 cups of the wet mixture,
  6. Combine Wet And Dry Ingredients. Pour the wet blender ingredients into the dry ingredients and stir just until combined. Fold in all but 2 tablespoons of the reserved corn kernels into the batter. Spread the batter into the prepared baking pan. Sprinkle the last 2 tablespoons of corn kernels on top of the batter.
  7. Bake Cornbread, Transfer the baking pan to the oven and bake for 20-25 minutes, or until the  cornbread is golden brown and a wooden toothpick inserted in the center comes out dry and clean. Remove from the oven and let the cornbread cool in the pan on a wire rack for 15 minutes. Cut into 9 squares and serve with butter and honey, or honey butter.

Tips For Making Moist Cornbread

  • Don’t over-mix the batter.
  • Halfway through baking, rotate the pan in the oven so it bakes evenly,
  • Keep an eye on it at the 20 minute mark to make sure it doesn’t get over done. To check for doneness, stick a toothpick in the center of the bread. If the toothpick comes out clean and dry, it’s done and you can remove it from the oven.
