  • Chipotle Peppers In Adobo Sauce. We use canned chipotles in adobo sauce for this recipe. 
  • Sour Cream. We use sour cream as our base instead of mayonnaise.
  • Buttermilk.  Buttermilk is used to thin the sour cream and add a richness to the sauce.
  • Lime Juice.  A little lime juice balances the smokey flavor of the adobo sauce.
  • Cilantro. Fresh cilantro adds flavor.
  • Seasonings. We add onion powder, garlic powder, salt and black pepper to season the sauce.

How To Make Chipotle Sauce

  1. Blend Ingredients. Whisk together the mayonnaise, olive oil, lime juice, grated garlic and adobo sauce. Add more adobo sauce if you want things a little spicer. Season with a pinch of salt and freshly cracked black pepper to taste.
  2. Refrigerate. Transfer aioli to an airtight container and place in the refrigerator for up to an hour before serving (longer is even better) to allow the flavors to blend together.

How To Store Leftover Chipotle Peppers In Adobo Sauce

Sometimes recipes call for chipotle peppers in adobo sauce (like this one), but we don’t typically end up using the whole can, and then we are left wondering what to do with what’s left. Rather than just tossing  the can in the trash, you can quickly and easily measure the remaining peppers and adobo sauce out and freeze it for later use. Here’s how:

  1. Prep Cookie Sheet. Line a cookie sheet with a Silpat, parchment paper or waxed paper.
  2. Mark Date On Freezer Bag. Label freezer bags with date and contents of bag.
  3. Blend Chipotle Peppers in Adobo Sauce. Add the leftover chipotle peppers and the adobo sauce to a small blender or food processor and blend until smooth.
  4. Measure Sauce. Using a tablespoon or small melon scoop, measure the blended chipotle adobo sauce by the tablespoonfuls onto the silicon mat or waxed paper. We like to measure out the tablespoonful that way when we add the chipotle adobo sauce to recipes, it’s already measured out for us. Alternatively, you can also measure the chipotle adobo sauce into an ice cube tray.
  5. Freeze. Pop the cookie sheet (or ice cube tray) into the freezer for 30-45 minutes, or until frozen solid.
  6. Freezer Bags. Transfer the frozen scoops (or cubes) of blended chipotle sauce into the prepared plastic freezer bag.

Ingredients

  • 1-1/4 cups sour cream
  • 1/4 cup buttermilk
  • Juice of 1/2 lime
  • 1 chipotle chili in can
  • 2 teaspoons adobo sauce
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon salt

Instructions

  1. Place the ingredients in a blender or food processor and blend until the consistency is smooth. There will be little fine specks of cilantro in the sauce, and that's fine. Season with a pinch of salt and freshly cracked black pepper to taste. Add more chipotle pepper or adobo sauce if you want a spicier sauce.
  2. Transfer sauce to an airtight container and place in the refrigerator. Refrigerate for up to 1 hour before serving so the flavors have time to blend together.
  3. Store leftovers in an airtight container in the refrigerator. If properly stored, it should last up to 5 days.
