Oven Roasted Asparagus Recipe

  • 1 bunch of organic asparagus
  • 2 heads of garlic
  • 2 cloves garlic
  • 3 tablespoons extra virgin olive oil
  • zest of 1 lemon
  • 1/4 cup lemon juice
  • 1/4 cup freshly snipped chives
  • 1/4 cup sliced almonds, toasted

How to Roast Asparagus

If you’ve ever wondered how to roast asparagus in the oven – it couldn’t be easier!  This roasted asparagus with lemon comes together in about 40 minutes (20-30 minutes for roasting the garlic, the another 10-15 for roasting the asparagus).

  1. Preheat oven to 400 degrees
  2. Place the almond slices on a baking sheet and roast for just 2 to 3 minutes or until slightly browned.
  3. Slice off the tips of the whole garlic heads, exposing the garlic flesh.  Place the garlic heads in a small dish.
  4. Drizzle 2 tablespoons olive oil over the heads and sprinkle with salt and freshly ground black pepper.
  5. Roast for 20 to 30 minutes or until the garlic feels soft when you squeeze a bulb.  Remove from oven and set aside to cool. 
  6. Gently remove the cloves from the skins and place in a small bowl.  Add the minced garlic, minced chives and lemon juice.  
  7. Place the asparagus on a rimmed baking sheet.
  8. Drizzle with 2 tablespoons olive oil and sprinkle with lemon zest and salt and freshly ground black pepper.
  9. Roast for 10 to 15 minutes or until just tender.
  10. Place the asparagus on a serving platter and garnish with the garlic lemon juice mixture and the toasted almond slices.

Temperature to Roast Asparagus

Preheat the oven and roast asparagus on a cookie sheet or baking dish at 400-425 degrees (depending on the size of your oven).

  • Depending on the thickness of the asparagus spears, roasting asparagus will take between 5-12 minutes.
