Citrus Marinade For Grilled Chicken
This citrus chicken marinade is so easy to pull together and it makes really flavorful chicken thighs!
- Citrus. We use the juice and zest of fresh oranges and limes.
- Honey. A little honey balances the citrus.
- Olive Oil. This adds a little flavor, plus it helps to prevent the chicken from sticking to the grill.
- Seasoning. We only use a little salt and freshly ground black pepper.
How To Make Citrus Marinated Grilled Chicken
- Prepare Citrus Marinade. In a large bowl, combine the orange and lime juice and zest, olive oil, honey, salt and pepper.
- Prepare Strawberry Salsa. Whit the chicken marinates, prepare the strawberry salsa.
- Marinate Chicken. Add the chicken thighs and toss them to coat well. Cover with plastic wrap and place in the refrigerator. Marinate for 1 hour.
- Grill Chicken. Preheat grill to medium-high heat. Either use a outdoor grill or stovetop grill. Remove the chicken from the marinade and grill for 4-5 minutes on each side, or until the chicken reaches an internal reading of 165°F on a digital meat thermometer. Transfer the chicken to a serving plate or platter.
- Serve. Serve the citrus marinated chicken with our strawberry salsa.

Ingredients
- 6 boneless, skinless chicken thighs
- 1 large orange, juice and zest
- 1 large lime, juice and zest
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons pure clover honey
- 1/2 teaspoon salt
- 1/4 teaspoon freshly cracked black pepper
For the Strawberry Salsa
- 2 cups fresh strawberries, stems removed and chopped
- 2 tablespoons red onion, diced
- 1 lime, juiced
- 6 fresh basil leaves, finely chopped
- 1/2 teaspoon fresh jalapeno, finely minced (optional)
- 1/4 teaspoon salt
Instructions
- Combine the citrus juice and zest, olive oil, honey salt and pepper in a large bowl. Add the chicken thighs and toss to coat well. Cover and refrigerate for 1 hour.
- Preheat the grill to medium-high. Remove the chicken thighs from the marinade and grill for 4-5 minutes on each side, or until the internal temperature reads 165°F on a meat thermometer.
- While the chicken is grilling, combine the ingredients for the strawberry salsa in a small bowl. Refrigerate until you're ready to serve.
