Tarragon Vinaigrette
This lemon Tarragon Vinaigrette recipe is made with fresh tarragon leaves, lemon juice, olive oil, Dijon mustard, garlic, and hardboiled egg yolk. It’s a great little tarragon salad dressing to toss with simple mixed greens, chopped green salads, and salads with chicken or salmon.

There was a little French restaurant that my family used to love to eat at, but unfortunately they went out of business years ago. We’ve missed their salads served with their very popular French tarragon vinaigrette, so this recipe is our riff on their tarragon salad dressing. We think it’s pretty spot on!
Tarragon Vinaigrette Recipe Ingredients
- Lemon Juice. A little lemon juice adds a fresh flavor to this dressing. You can use white wine vinegar, red wine vinegar or sherry vinegar instead of the lemon juice if you like.
- Dijon Mustard. Adding a bit of Dijon mustard makes the dressing creamy good (and also adds a little flavor).
- Olive Oil. We use olive oil for this recipe, but you could use extra-virgin olive oil or avocado oil if you prefer.
- Hardboiled Egg Yolk. Adding hardboiled egg yolk gives the dressing a slightly creamy consistency.
- Garlic. Garlic also adds flavor to this dressing. Add another clove if you like it a little more garlicky.
- Fresh Tarragon. We use fresh tarragon leaves for this vinaigrette. Add more if you want a stronger tarragon flavored dressing.

How To Make Tarragon Vinaigrette
This lemon tarragon salad dressing recipe is an easy recipe to pull together especially if you use a blender!
- Blender. Add all of the ingredients to a blender and blend for a few seconds until the ingredients are well incorporated.
- Whisk. You can also add all of the ingredients to a bowl and whisk together using a wire whisk, or add everything to a mason jar, seal the lid and vigorously shake
- Storage. Store the dressing in a mason jar or an airtight container in the refrigerator. If properly stored, it should last up to 5 day.

Ingredients
- 1 hardboiled egg yolk
- 1 tablespoon Dijon mustard
- 1 clove garlic smashed and chopped
- 2 tablespoons lemon juice
- 1/2 cup extra-virgin olive oil
- 3 teaspoons fresh tarragon leaves
- 1 teaspoon salt
- 1/2 teaspoon cracked black pepper
Instructions
For the Hardboiled Egg
- Fill a large pot with cool water and add eggs. The water should cover them by an inch or more.
- Boil eggs for 8-10 minutes.
- Drain the pot and refill with cold water. Let eggs sit in cold water for another 2-3 minutes.
