How To Roast Fingerling Potatoes

  • Preheat Oven. Preheat the oven to 400°F.
  • Make Dressing. Blend the olive oil, vinegar, lemon juice, Dijon mustard, garlic and seasonings in a blender for 10-15 seconds so the garlic blends well into the oil.
  • Prep Potatoes. Rinse the potatoes under cold water to remove any dirt and debris. Lay them on paper towels and pat them completely dry. Slice the potatoes in half lengthwise and then put them on the baking sheet. Pour 2 tablespoons of olive oil over the potatoes and toss to coat evenly. Lay them in a single layer on the baking sheet.
  • Roast Potatoes. Put the potatoes in the preheated oven and cook for about 20 minutes. Remove the baking sheet from the oven and toss the potatoes. Add the little cubes of butter in with the potatoes and return the baking sheet to the oven to cook another 10 minutes, or until the potatoes are a light golden brown. The actual time will depend on the size of your potatoes and the actual temperature of your oven.
  • Toss With Lemon Dijon Dressing. Remove the baking sheet from the oven and immediately drizzle the dressing over the potatoes and toss. Sprinkle  the finely grated parmesan cheese, salt, black pepper and chopped parsley over the potatoes and toss. Transfer the potatoes to a serving bowl. Enjoy!
