Ingredients

  • Rice. We use long-grain white rice for this recipe.
  • Oil. I like to use light olive oil to saute the onion in, but you can use any light neutral flavored oil you prefer. 
  • Onion. We use onion to add flavor to this rice. You can add 1-2 cloves of garlic as well if you like.
  • Broth. Use low-sodium chicken broth.
  • Seasoning. We sprinkle in onion powder and garlic powder for flavor.
  • Butter. This is optional, but if you want a buttery flavor to your rice, then drop in a tablespoon or two of butter into the broth as it simmers.

How To Make Mexican White Rice

  1. Toast Rice.  Cook the onion and rice in a little oil until rice turns golden brown and the onions are soft.

2. Add Chicken Broth.  Pour in the chicken broth and stir.

3. Add Seasoning.  Stir in the seasoning.

4. Add Butter. If using butter, drop the butter into the broth.

5. Cook Rice.  Simmer rice over low heat for about 20 minutes or until the liquid has absorbed. It will still look a little moist on top. This will settle after the rice sets for 10-15 minutes.

6. Set Rice.  Let cooked rice set in pot with lid on for about 10-20 minutes before fluffing.

7. Fluff.  Fluff rice using a fork and serve.

Tips For Making Fluffy Rice

  1. When you toast the rice, make sure its nice and golden before adding the broth. Not only does this step add flavor, it helps to prevent the rice from sticking together.
  2. Don’ stir rice while it cooks.
  3. Allow the rice to rest in the pan 10-20 minutes before fluffing it. If you fluff the rice right away, you’ll end up with sticky and clumpy rice. Not the look we’re going for. We want light and fluffy.

Ingredients

  • 1 cup long-grain rice (very important for the rice to be long-grain)
  • 1/2 cup yellow or brown onion, finely chopped
  • 2 tablespoons light olive oil (or vegetable oil)
  • 1 tablespoon butter
  • 2 cups chicken broth
  • 1-1/2 teaspoons onion powder
  • 1/4 teaspoon garlic powder

Instructions

  1. Heat the oil and butter in a saucepan over medium-high heat.
  2. Add the chopped onion and the rice.
  3. Reduce heat and cook the onion and rice over low heat for about 5-10 minutes or until the rice is golden/light brown in color, stirring frequently to prevent it from burning.
  4. Pour in the chicken broth and add the onion and garlic powders. Stir to blend.
  5. Drop in 1-2 tablespoons of butter. Bring the broth to a boil, then reduce heat to a low simmer.
  6. Stir about once during the first 2-3 minutes, then leave ithe rice alone and let it simmer for 20 minutes or until the liquid is mostly absorbed . The rice will still look a little moist on top. This will settle after the rice sets for 10-15 minutes.
  7. Remove from heat. Let the rice set for another 10-15 minutes with the lid still on the pot so all of the liquids can be absorbed.
  8. Fluff rice just before serving.
