Salsa Verde Rice Recipe
- Rice. We use long grain white rice for this recipe.
- Oil. I like to use light olive oil to saute the onion and garlic in, but you can use any light oil you prefer.
- Salsa Verde. Use either homemade salsa verde or a good store-bought brand.
- Aromatics. We use onion and garlic to add flavor to this rice dish.
- Broth. I like to use low-sodium chicken broth, but you can use vegetable broth if you like.
- Herbs. We toss the cooked rice with fresh cilantro.

How To Make Mexican Green Rice
This Salsa Verde Rice comes together in about 30 minutes start-to-finish.
For starters, you want to rinse the rice well under water. This step is important for removing starches on the outside of the rice which will cause the rice to clump and stick together as it cooks. Add rice to a fine mesh strainer and run under cold water until the water runs clear.
Heat oil in saucepan. Add onion and garlic and cook for about 2 minutes until onion softens.
Stir in the salsa verde.
Pour in the chicken broth.
Stir in the rice and bring to a boil. Lower heat to a simmer and place lid on the pot. Simmer on low heat for about 20 minutes.
Remove from heat and let the rice set in the pot (with the lid still on) for about 10 minutes before fluffing. Fluff rice with a fork and toss with chopped cilantro.

- 3/4 cup salsa verde (use homemade salsa verde or store-bought)
- 1 small onion, finely chopped
- 2 cloves garlic, peeled and minced
- 1-3/4 cup low-sodium chicken broth
- 1/2 cup fresh cilantro, finely chopped
