  • Eggs.  We use free-range brown eggs that have been cooked sunny-side up for this sandwich, but you can cook the eggs however you like them best (over easy or over hard). You can use one fried egg for each sandwich or two fried eggs for each sandwich (one for each half a sandwich after it has been sliced in two).  It just depends on how hungry you are.
  • Turkey Bacon. When cooked right, turkey bacon is as flavorful as regular bacon and it contains less calories and less saturated fat.
  • Cheese. We use Havarti cheese for this sandwich, but you could use cheddar, American or Swiss.
  • Bread. You need to use a sturdy thicker sliced bread like a French or sourdough for this sandwich, but English muffins and bagels work as well.
  • Garlic Aioli. We use a tasty homemade garlic aioli  (made with mayonnaise, pressed garlic and. lemon juice) to slather on the toasted bread, which takes this sandwich up a notch.
  • Tomato. We like to add few slices of tomato to this sandwich.
  • Arugula. We use arugula, but you can use lettuce if you like.

  • Add avocado slices
  • Use buttered toast or plain mayonnaise rather than the garlic aioli
  • Use turkey sausage rather than turkey bacon, or don’t add any meat at all for a vegetarian sandwich.
  • If you want melted cheese, place a slice of cheese on a toasted piece of bread and place it on a baking sheet in the oven (heated at 350) for a few minutes until the cheese melts, or place it in a skillet over medium-low heat and cover with foil until the cheese melts.

  1. Make Aioli.  Measure the ingredients and add them to a small mixing bowl. Using a fork or spoon, stir the pressed (or grated) garlic and lemon juice into the mayonnaise.
  2. Fry Bacon.  Heat 2-3 tablespoons extra-virgin olive oil in a skillet.  Carefully lay the turkey bacon slices into the hot oil, cooking 3-4 slices at a time. Cook for 2-3 minutes on each side until crispy.

Place a nonstick frying pan over medium-low heat and add a tablespoon of butter, brushing the butter around the pan. Crack an egg in a small bowl or ramekin. Carefully slide the egg into the pan.   • 3 tablespoons extra-virgin olive oil

For The Garlic Aioli
