  • Eggs. We use 1 dozen large brown eggs for this recipe.
  • Cheese. We use sharp cheddar, Jack cheese and parmesan cheese for a delicious combination of flavors.
  • Cottage Cheese. We use full fat cottage cheese. It adds fluffiness and more protein to the mix.
  • Red Bell Pepper. A little red bell pepper adds a pop of color and a hint of flavor.
  • Green Onion. We like to toss in green onion for added flavor.
  • Seasoning.  A little onion powder, garlic powder, black pepper and salt to season things. We also sprinkle the top with a little regular paprika just before it goes in the oven.
  • Flour AND Baking Powder.  A little bit of all-purpose flour and baking powder gives a little height and adds to the texture of this delicious egg bake with cottage cheese.
  • Butter. We use butter to grease the baking dish.

How To Make Cottage Cheese Egg Bake

  1. Preheat Oven. Preheat oven to 350°F. Grease a 9×13 baking dish with 2 tablespoons unsalted butter.
  2. Beat Eggs. Beat eggs and cottage cheese in a large mixing bowl. Add the flour, baking powder, and seasonings and beat well so the flour and seasonings are well incorporated into the egg mixture.
  3. Add Cheese. Stir in the cheese, diced green onions and red bell peppers.
  4. Bake. Pour the egg mixture into the prepared baking dish. Sprinkle the top with a pinch of finely ground black pepper and paprika.Bake in the oven for 35-45 minutes or until set and lightly browned on top. Let the egg and cottage cheese bake rest for 10 minutes before cutting into individual serving pieces.

Ingredients

  • 12 large eggs
  • 2 cups cottage cheese
  • 1/4 cup all purpose flour
  • 1/4 teaspoon aluminum free baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/3 cup red bell pepper, diced
  • 4 green onions, diced
  • 1 cup sharp cheddar cheese, grated
  • 1 cup Jack cheese, grated
  • 1 cup parmesan cheese, grated
  • 1/8 teaspoon paprika

Instructions

  1. Preheat oven to 350°F
  2. Butter or grease a 9 x 13 baking dish.
  3. In a large bowl, beat the eggs and cottage cheese together. Whisk in the flour, baking powder, onion powder, garlic powder, salt and black pepper until well incorporated.
  4. Stir in the grated cheeses and the diced bell pepper and green onion. 
  5. Pour into the prepared baking dish and sprinkle the top with paprika.
  6. Bake for 35 to 45 minutes, or until cooked through and a toothpick inserted in the center of the egg bake comes out dry and clean.
  7. Rest in baking dish 5-10 minutes before cutting into individual slices.
