- Green Beans. Use skinny string beans (like haricot verts). They cook quicker and they’re more tender.
- Olive Oil. We toss the green beans in a little olive oil before roasting them in the oven.
- Butter AND Pure Maple Syrup. We use butter and pure maple syrup to make a maple butter. Be sure to use pure maple syrup and not pancake syrup.
- Almonds. We roast raw almonds in the oven for about 10 minutes and then we give them a quick spin in a food processor or blender to finely crush them.
- Seasoning. We season these roasted sweet potatoes with just a little salt and pepper to taste.

How To Roast Green Beans In The Oven
- Toast Almonds. Preheat oven to 350°F. Spread the almonds on a baking sheet in a single layer and put the baking sheet in the oven. Roast the almonds in the oven for 10-15 minutes. Cool completely then transfer the almonds to a food processor (or blender) and pulse several times to finely chop them.
- Rinse And Trim Green Beans. Put the green beans in a colander and place under cold running water to remove any dirt. Pour the green beans out on paper towels and pat them dry. Trim the ends off each green bean and discard any bruised or discolored green beans.
- Roast Green Beans. Preheat oven to 425°F. Transfer the green beans to a baking sheet and toss them with the olive oil. Roast in the oven for 8 minutes.
- Make Maple Butter. While the green beans roast in the oven, melt the butter in a small saucepan and add the pure maple syrup to make a maple butter to drizzle over the green beans. Cook the maple syrup for 1 minute on low heat. Be careful it doesn’t burn. Remove from heat and set aside.
- Toss Green Beans With Maple Butter. Remove the green beans from the oven and drizzle the maple butter over the green beans and toss with a spatula so the green beans are evenly coated. Return the baking sheet to the oven and roast the green beans another 2-3 minutes. Remove the baking sheet from the oven and sprinkle the finely chopped almonds over the green beans and toss with a spatula. Season with the salt and pepper. Transfer the green beans with all the almonds and maple syrup to a serving bowl.
