Brushetta Chicken
This grilled Bruschetta Chicken recipe is made with marinated chicken cutlets served with lots of our Italian Salsa. The Italian salsa adds a bright pop of freshness and flavor with chopped arugula, Roma tomatoes, kalamata olives, capers, lemon zest and parmesan cheese shavings. This chicken bruschetta is a twist on the classic Italian bruschetta chicken.

Grilled Bruschetta Chicken is a quick and easy meal to make any night of the week. While the chicken marinates in the refrigerator for 20-30 minutes, we prepare the delicious Italian Salsa. Serve this no fuss dinner with warm crusty bread or our homemade Italian garlic bread.

Bruschetta Chicken Recipe
- Chicken. We use thin chicken cutlets for this recipe.
- Marinade. We use a simple marinade made with extra-virgin olive oil, garlic, lemon juice and salt. It’s blended together so the garlic is well blended into the oil and lemon juice. This garlic oil is great to pan sear vegetables in with your favorite seasonings as well. We use it frequently when making Italian dishes and shawarma.
- Italian Salsa. We scatter the grilled marinated chicken cutlets with our Italian Salsa . It has a little more to it that the classic bruschetta chicken with tomatoes, basil and balsamic glaze.

How To Make Grilled Bruschetta Chicken
- Prep Chicken. Pat the chicken dry with paper towels to eliminate as much moisture from the cutlets as you can.
- Make Marinade. Blend the ingredients together in a NutriBullet, stand blender or using a stick blender. We want the garlic to be blended well with the olive oil and lemon juice. But you can also whisk the ingredients together in a medium bowl if you don’t want to pull out the blender.
- Marinate Chicken. Place the chicken breasts in a large bowl and pour the marinade over it, making sure all of pieces are covered and coated.
- Refrigerate Chicken. Cover the bowl with plastic wrap and place in the refrigerator to marinate for 30 minutes.
- Grill Chicken. Preheat the grill (outdoor grill or cast iron grill pan on the stove) and place the chicken on the hot grill. Grill the chicken 2-3 minutes on each side for thinner cutlets and 5-7 minutes on each side for thicker boneless breasts. Check the temperature of the chicken for doneness. It should register 165°F – 180F on a digital thermometer. Let the chicken rest for 5 minutes. Then transfer to a serving platter.
- Make Italian Salsa. While the chicken is cooking toss the ingredients for the Italian salsa together in a large bowl. Drizzle the olive oil, lemon juice and zest over the ingredients and season with salt and freshly ground black pepper. Taste test and add more lemon juice and zest if needed. Spoon the Italian salsa evenly over each chicken cutlet.
- Garnish. Add shaved parmesan and more lemon zest to the top of the salsa.

Storing Leftovers
- Store the leftover cilantro lime chicken in an airtight container. If properly stored, it should last 3-4 days.
- To reheat, add 1-2 tablespoons of olive oil or butter to a skillet and cook on medium-low heat until the chicken is heated through.

Ingredients
- 4 thin chicken cutlets
- 1/2 cup extra-virgin olive oil
- 3 tablespoons fresh squeezed lemon juice
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- Italian Salsa
Instructions
- Blend the olive oil, lemon juice, garlic and salt in a NutriBullet or use a stick blender.
- Pat the chicken thighs dry with paper towels. Place the chicken thighs in the bowl with the marinade and turn them over a few times making sure all of the thighs are coated and resting in the marinade.
- Cover the bowl with plastic wrap and place in the refrigerator for 30-60 minutes to marinate.
- Preheat the grill (outdoor grill or cast iron grill pan) to medium high heat and place the chicken on the hot grill. Grill the chicken 2-3 minutes on each side for very thin cutlets or 5-7 minutes on each side for thicker boneless breasts, or until the internal temperature reaches 165°F to 180°F on a digital meat thermometer inserted in the thickest part of the chicken. The cook time will vary depending on the size of the chicken cutlets.
- While the chicken is cooking, prepare the Italian Salsa.
- Transfer the grilled chicken to a serving platter and garnish spoon the Italian salsa evenly over the chicken cutlets. Garnish with shaved parmesan and more lemon zest to the top of the salsa on each cutlet.
