How To Make Italian Sausage Vegetable Soup

- Cook Aromatics. Heat oil and in large Dutch oven over medium-high heat. Add the onions, celery and carrots to the pot and sauté for approximately 2-3 minutes. Add the garlic and sauté for another 2-3 minutes.
- Brown Sausage. Scoot the aromatics to the side of the pot and add the sausage next to them (be sure to remove the outer casing first). Break the links up with a wooden spoon or spatula. Cook over medium-low heat for 5-7 minutes. Mix in the onion, celery and carrots with the cooked sausage.
- Add Canned Tomatoes AND Seasoning. Stir in the canned tomatoes (juice and all) and the seasonings.
- Simmer Soup. Pour in the broth and add bay leaves. Bring to a boil, then reduce heat to low and place lid on the pot and simmer 10 minutes. Add the finely grated parmesan cheese and the potatoes and simmer another 10 minutes. Add the zucchini and squash and continue to simmer another 5-10 minutes just until the zucchini and squash are barely tender. Don’t overcook the zucchini. It should still have bright colors and still be a little firm. The zucchini should be added at the very end just before you’re ready to serve the soup. You don’t want the zucchini and squash to simmer in the soup long or it will turn to mush.
- Enjoy. Ladle the soup into bowls and garnish with finely chopped parsley, grated parmesan cheese and homemade croutons.

- How To Make Then. Transfer the bread cubes to a baking sheet and drizzle 1/4 cup olive oil over them. Using your hands or a spatula, toss the croutons in the olive oil so they are all evenly coated. Transfer the baking sheet to a preheated oven set to 350°F and bake in the oven for 20-30 minutes or until the croutons are golden in color. Turn them once or twice midway through cooking.
Storing Leftovers
Store leftover soup in an airtight container in the refrigerator. If properly stored, the leftover soup should last up to 3-4 days. If you make croutons to serve with the soup, be sure to store the croutons and the soup separately. The croutons don’t need to be refrigerated.
