This fluffy Cilantro Lime Quinoa is simmered in vegetable broth with onion and garlic, then  it’s tossed with a wee bit of fresh lime juice and chopped cilantro, making this an easy side dish to serve with grilled veggies, chicken, fish or your favorite Mexican dish.

This quinoa side dish is one of my favorites!  It has a great refreshing taste and it’s healthier for you than cilantro lime rice.  It makes a perfect side dish to serve at your next Taco Tuesday or Cinco de Mayo Fiesta!

CILANTRO LIME QUINOA RECIPE

  • Extra virgin olive oil
  • Yellow onion
  • Garlic 
  • Quinoa
  • Water
  • Vegetable broth
  • Onion powder
  • Fresh lime juice
  • Cilantro

HOW TO COOK QUINOA

  1. Saute onion and garlic: Heat oil in a large saucepan over medium-high heat.  Add onions and saute 1 minute then add garlic and quinoa and saute 2 minutes longer.
  2. Chicken broth and seasoning: Pour in chicken broth,  water, 1 tablespoon lime juice, and onion powder.
  3. Simmer: Bring mixture to a boil, then reduce heat to low, cover and simmer 20 minutes.  (Don’t remove the lid)
  4. Let cool:  Remove from heat, set aside for about 5 minutes to slightly cool. 
  5. Cilantro lime:  Fluff with a fork, stir in cilantro and remaining lime juice and salt and pepper to taste.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 3/4 cup yellow onion, minced
  • 2 garlic cloves, minced
  • 1 cup quinoa, rinsed
  • 1 cup water
  • 1 cup low-sodium free-range chicken broth
  • 1/2 teaspoon onion powder
  • 3 to 4 tablespoons fresh lime juice
  • 1/3 cup organic cilantro, finely chopped
  • salt and freshly ground black pepper to taste

Instructions

  1. Heat oil in a large saucepan over medium-high heat.
  2. Add onions and saute 1 minute then add garlic and quinoa and saute 2 minutes longer.
