It’s common to use peach puree for bellini, but you can also freeze fruit puree into ice cubes to add to water (plain or sparkling) or your favorite tea for a refreshing pop of flavor.

I love to make this recipe during the warm summer months.  They add such an incredible juicy sweet flavor (without any added sugar) to a glass of water or iced tea.  And I do love my iced green tea!!!  

Summer Peach Ice Cubes Recipe

  • Ripe peaches (yellow or white, fresh or frozen), peeled
  • Fresh squeezed lemon juice
  • Water 
  • Fesh ginger juice (optional)
  • Clover honey (optional – depending on desired sweetness)

How to Make Summer Peach Ice Cubes

This recipe takes about 5-7 minutes depending on your blender/food processor speed, plus 3-4 hours (or overnight) to freeze the ice cubes.

  1. Add the peaches, lemon juice, ginger juice and honey to a blender or food processor.  
  2. As the blender is running, slowly add just a few drops of water if needed help the peaches blend.
  3. For the fresh ginger juice, grate fresh peeled ginger, then squeeze the juice from it using your fingers.
  4. Press the mixture through a sieve and discard large pieces (if you don’t mind having a few pieces of fruit in your ice cubes, you can skip this step).
  5. Spoon the puree into trays.
