This recipe for mango salsa is deliciously fresh and flavorful and its super quick and easy to make.

This mango salsa has been a staple in our family for years. My dad loved to make all kinds of fish recipes and he would either serve them with a homemade tartar sauce or this mango salsa. 

Mango Salsa Recipe

  • Fresh Mango. Use fresh ripe juicy mango for this recipe. 
  • Red Pepper. Red pepper goes really well with mango. It also adds a pop of color and crunch to the mix.
  • Onion. We use a mix of both red onion and green onion in this salsa. They each have distinctive flavors and they both add a lot of flavor to this salsa.
  • Jalapeno. Fresh jalapeno adds a little heat to the mix. We mince it small and we only add a wee bit so this salsa is not spicy just flavorful. If you like spicy, then add more jalapeno to the mix. 
  • Cilantro. We don’t add a ton of cilantro, just enough to add flavor. Even people who aren’t fans of cilantro will love this salsa.
  • Lime Juice. A little lime juice adds a nice pop of flavor.
  • Olive Oil. Use regular olive oil rather than extra-virgin. Olive oil has a neutral flavor and extra-virgin olive oil has a more robust flavor. We want a neutral flavored oil for this salsa.
  • Seasoning. We season this salsa with just a pinch of sea salt and freshly ground black pepper.

How To Make Mango Salsa

This recipe comes together in about 5 minutes, but it is best if allowed to chill in the refrigerator for a 30 minutes or so before serving. It’s even better the next day when the juices from the mango really take on the flavors of the other ingredients in this salsa. It’s SO good!

  1. Prepare Ingredients. Peel the mango and chop it and the other ingredients. Add everything except the lime juice and oil to a medium size bowl and toss.
  2. Add Lime Juice. Drizzle the oil and lime juice over the ingredients and toss.
  3. Season. Season with sea salt and black pepper. Toss again.
  4. Refrigerate. Place plasic wrap over the bowl and refrigerate the salsa until you’re ready to serve. 
  5. Store Leftovers. Store leftovers in an airtight container in the refrigerator. If properly stored, the salsa will last up to 3-5 days.

How To Tell When A Mango Is Ripe

A perfectly ripe mango will have a strong flowery fragrance, and will slightly yield when you gently squeeze it. The skin should have tones of yellow-orange or red which will increase as the fruit ripens. Avoid mangoes that have a loose or shriveled skin, or black spots on the skin which may indicate overripeness and damage to the flesh inside.

How To Cut Mango

Cutting a mango can be a bit tricky at first, but once you get the hang of it, it’ll become a breeze.

  • Hold the fruit standing on one of its ends.
  • Slice down one side of the pit vertically, then repeat on the other side. There will be flesh left around the pit.
  • Using a paring knife, score the flesh of each half into cubes. You don’t want to slice all the way through the skin.
  • Using a spoon, scoop along the inside of each half as close to the skin as you can to cut out all of the cubes. Alternately, you can turn each half inside out so the cubes pop outward, then cut away the cubes.
  • Cut away the band of fruit around the pit and peel away the skin. Cut the flesh into pieces.

  • 4 fresh ripe mangoes, peeled and chopped
  • 1/2 cup red pepper, deseeded and finely chopped
  • 3 tablespoons red onion, finely chopped
  • 3 green onion, sliced
  • 2 teaspoons fresh cilantro, finely chopped
  • 1-1/2 teaspoons jalapeno, deseeded and finely minced
  • 1-1/2 tablespoons fresh squeezed lime juice
  • 1-1/2 tablespoons neutral flavored olive oil
  • Pinch sea salt
  • Pinch fresh ground black pepper

Instructions

  1. Add all of the ingredients except the lime juice to a medium size bowl.
  2. Squeeze the lime juice over the ingredients and toss to combine.
