Avocado Chicken Salad
This quick and easy Avocado Chicken Salad is made with chicken, celery, onion, red pepper, cilantro and black olives all tossed in a creamy avocado mayo (that contains no mayonnaise).
This chicken and avocado salad is great stuffed between two slices of bread, rolled in a wrap, or served with crackers and tortilla chips. It’s also good straight-up by the spoonfuls!
AVOCADO CHICKEN SALAD RECIPE
The avocado mayonnaise used for this recipe is super easy to make and it adds a dose of healthy fat and delicious flavor to the mix.
- Cooked chicken
- Purple onion
- Celery
- Red pepper
- Fresh cilantro
- Black olives
- Avocado mayo (recipe below)
- Seasoning (onion and garlic powder, salt and freshly ground black pepper)
HOW TO MAKE CHICKEN SALAD WITHOUT MAYO
This Southwest avocado chicken salad comes together in about 20 minutes start-t0-finish.
- In a medium size mixing bowl, combine the chicken, onion, celery, red pepper, cilantro and black olives. Set aside.
- Fold the avocado mayo into the ingredients until well incorporated.
- Season with salt and freshly ground black pepper to taste.

- Ripe avocados
- Lemon juice
- Onion powder
- Fresh cilantro leaves, chopped
- Jalapeno, minced (optional)
- Salt to taste
HOW TO MAKE AVOCADO MAYONNAISE
- Remove pit and peel from avocados.
- Add all of the ingredients to the blender or food processor and blend until you reach your desired creamy texture.
HOW TO PICK AVOCADOS
I always remove the little stem on the end of the avocado where it was attached to the tree. If it’s a light green under the stem – then the avocado is good. If it’s brown under the stem – then the avocado is going to be too ripe and the flesh will have brown spots. You want the avocado to be relatively firm with a little give when testing it with your hand. If there are soft spots, the avocado is going to be too ripe with brown spots.

- 2 ripe avocados
- 2 tablespoons lemon juice
- 1/2 teaspoon onion powder
