This is a fruit salad that we make on repeat during the summertime. It’s fresh and sweet and super easy to make.We toss the berries for this salad with a simple vinaigrette made with _____juice and honey. As the berries macerate in the syrup, they soften and release their sweet juices enhancing their flavor. Its SO good!

This berry fruit salad is popular to serve as a side at potlucks and barbecues, but it’s also wonderful served with frozen yogurt or ice cream as a dessert, and it’s always a hit for brunch served with granola and yogurt. You can use an assortment of berries for this salad, such as blueberries, raspberries, and strawberries. 

Berry Salad Recipe 

  • Berries. Choose fresh, ripe berries (preferably organic berries). 
  • Vinaigrette. This simple fruit salad dressing is made with _____________, pure clover honey and chopped fresh mint leaves.

Variations

  • Fruit. Add blackberries to the mix.
  • Herbs. Use fresh basil instead of fresh mint
  • Dressing. Toss the salad with our Pomegranate Vinaigrette (which is AMAZING) or our Lime Fruit Salad Dressing instead of our lime mint dressing.
  • Cheese. Sprinkle in Feta cheese or a good creamy honey goat cheese.
  • Nuts & Seeds. Toss in sliced almonds, pistashios, pepitas or sunflower seeds.

How To Make Berry Salad

  1. Make Dressing. Whisk together the ingredients for the dressing and transfer to an airtight container.
  2. Toss Salad. Toss the salad ingredients in a bowl. Drizzle the dressing over the salad and toss to coat. Sprinkle the Feta cheese over the top of the salad and garnish with fresh mint leaves.
  3. Store Leftovers. Store leftovers in an airtight container in the refrigerator. If properly stored, the salad may last 1-3 day

 

  1. Rinse berries. Rinse berries under cold water, then lay them out on paper towels and gently pat them dry. Cut strawberries in half so they are similar in size to the other berries you’re using.
  2. Make dressing. Whisk together the lemon juice, lemon zest, honey and chopped basil leaves.
  3. Toss salad. Add the berries to a serving bowl and drizzle with dressing. Gently toss.
  4. Refrigerate. After tossing the berry fruit salad with the dressing, refrigerate for up to 30 minutes before serving, so the flavors have a chance to blend. Add chopped mint leaves and toss again just before serving.

Ingredients

For the Fruit Salad Dressing 2 tablespoons clover honey

  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon fresh lemon zest
  • 3 tablespoons fresh basil finely sliced in ribbons
  • For the Berry Salad
  • 6 cups hulled fresh strawberries, cut in half (or quarters if large strawberries)
  • 1-1/2 cups fresh raspberries
  • 1 cup fresh blueberries
  • Fresh Mint, sliced into ribbons for garnish

Instructions

For the Fruit Salad Dressing

  1. Add the honey, lemon juice and zest to a small bowl.
  2. Whisk until the honey is well blended.

For the Berry Salad

  1. Gently toss rinsed (and dried) berries in a large bowl.
  2. Pour the fruit salad dressing over the berries and gently toss.
  3. Refrigerate for at least 30 minutes.
  4. Gently toss in the mint just before serving.
