Boursin Cheese Chicken Recipe

  • Chicken. We use chicken thighs for this recipe, but you can use chicken cutlets if you like.
  • Boursin Cheese. We use the. garlic herb Boursin cheese because it is our favorite!
  • Aromatics. We add a little garlic and onion for flavor.
  • Seasoning. We season the sauce with onion powder, garlic powder, Italian seasoning and freshly cracked black pepper.
  • Oil AND Butter. We use the oil and butter to pan sear the chicken and cook the onion and garlic with.
  • Chicken Broth. Use low sodium or a chicken stock that doesn’t have any salt added. 
  • Parmesan Cheese. This is optional. We like to add 1-2 tablespoons grated parmesan cheese to the sauce. We always have parmesan cheese on hand, but if you don’t have any on hand, then omit it. Don’t spend the money on parmesan cheese just to add 1-2 tablespoons for this recipe. The sauce will still be amazing!
  • Parsley. We garnish the chicken with fresh parsley finely chopped.

How To Make Boursin Chicken

  1. Sear Chicken. Pan Sear Chicken Thighs. Pan sear the chicken thighs in a skillet until they’re golden. Transfer to a plate and set aside.
  2. Make Sauce. Sauté the onion and garlic, then add the chicken broth and seasonings. Set the Boursin chicken in the broth and cook over low heat until it melts. Set the chicken back in the sauce and cook another minute until the chicken is heated through.
  3. Garnish. Garnish with freshly chopped parsley.

How To Store Leftovers

  • Store leftovers in an airtight container in the refrigerator. If properly stored, leftovers should last 2-3 days. 
  • Reheat  leftovers in a skillet over low heat. Add a little water, chicken broth or milk if you need to thin the sauce a bit.

Ingredients

  • 4 boneless skinless chicken thighs
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon butter
  • 3 tablespoons brown onion, finely diced
  • 2-3 cloves garlic, finely minced
  • 3/4 cup low or no sodium chicken broth
  • 1 5.2 ounce package Boursin Fine Herbs & Garlic Cheese
  • 2 tablespoons parmesan cheese, finely grated (optional)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Remove the thighs from the package and thoroughly dry them by patting them dry paper towels. If you skip this step, the chicken will release moisture and you won’t end up with a beautiful golden crust and the chicken may turn out tough.
  2. Heat a skillet for a minute or two over medium low heat, then add the oil and heat for 30 seconds, then using tongs or a fork, carefully add the chicken thighs to the oil and let them cook 7-9 minutes or until the chicken lifts easily from the pan and the cooked side is a light golden brown.
  3. Add butter to the pan and swirl it after you lift the chicken from the pan. Set the chicken back in the pan and cook another minute longer in the butter so the chicken turns a rich golden brown color.
  4. Using tongs or a fork, turn the chicken to the other side and cook another 5-6 minutes or until a thermometer placed in the center of the chicken thighs registers 165° F. Add more butter and swirl and set the chicken back in the pan and cook another 30-60 seconds longer.
  5. Transfer the chicken to a plate and set aside.
  6. Add more oil to the skillet if needed and saute the onion for 3-5 minutes. Add the minced garlic and stir for another minute. Stir in the seasoning and pour in the chicken broth. When the chicken broth is heated through, add the Boursin cheese to the skillet and stir as it melts. Let it cook for 2-3 minutes until heated through, then rest the chicken thighs in the sauce and cook another 2-3 minutes to heat the chicken through. If the sauce is too thick, add a tablespoon or two of water, milk or cream.
