Watermelon Cucumber Feta Salad
Our Watermelon Cucumber Feta Salad recipe is a refreshing toss of juicy ripe watermelon, Persian cucumbers, heirloom cherry tomatoes, red onion, Feta cheese, fresh mint and spring mix all tossed in a tasty lime mint vinaigrette.
This is a great summer salad to serve at barbecues, picnics, potlucks, baby showers, birthdays and other special occasions or no occasion at all.
When making this salad, we usually start off by whisking together the ingredients for the dressing and then putting it in the refrigerator to chill for a bit until we’re ready to serve the salad. Then we cut the watermelon into cubes, slice the cucumbers, tomatoes and onions, and toss it all together in our favorite salad bowl. This is a tasty summer salad that can be served with grilled chicken or fish.
Watermelon Feta Salad Recipe Ingredients
- Watermelon. Purchase a seedless watermelon if you can. Then you won’t have to spend time removing all of the seeds.
- Cucumber. We use Persian cucumbers for this salad. You could also use English cucumbers, but you may want to slice the rings in half. If you use garden cucumbers, you’ll want to peel them and scrape out the seeds with a spoon, because they both can be bitter tasting. English cucumbers and Persian cucumbers have a light peel and few seeds, so we like to use either of them for salads
- Cherry Tomatoes. We use heirloom cherry tomatoes because we like the flavor and the different colors added to the salad. You can use regular cherry tomatoes if you like. You could also cut heirloom tomatoes into small chunks to add to the salad. This makes a pretty presentation.
- Spring Mix. We add spring mix to the salad, but you could use arugula if you prefer.
- Red Onion. A little red onion adds a pop of flavor to the salad. If you want a more mellow onion taste, just soak the slices of onion in a little bowl filled with water for about 15 minutes. You can do this while the noodles cook. I like to add sliced onions rather than chopped onions to most of my salads. This is for people who may not like onions so it’s easier for them to pick out the onion in their serving
- Feta Cheese. A little Feta cheese adds a pop of flavor and creaminess to the salad.
- Fresh Mint. We sprinkle some fresh mint leaves to the top of the salad after it has been tossed with the dressing.
- Dressing. We toss this salad with a delicious Lime Mint Dressing.

Variations
- Herbs. Use fresh basil instead of fresh mint
- Dressing. Toss the salad with our Pomegranate Vinaigrette (which is AMAZING) or our Lime Fruit Salad Dressing instead of our lime mint dressing.
- Cheese. Instead of using Feta cheese you can use a creamy honey goat cheese, or omit the cheese altogether.
- Nuts & Seeds. Add sliced almonds, pistashios, pepitas or sunflower seeds.
How To Make Watermelon Salad With Feta And Mint
- Make Dressing. Whisk together the ingredients for the dressing and transfer to an airtight container.
- Toss Salad. Toss the salad ingredients in a bowl. Drizzle the dressing over the salad and toss to coat. Sprinkle the Feta cheese over the top of the salad and garnish with fresh mint leaves.
- Store Leftovers. Store leftovers in an airtight container in the refrigerator. If properly stored, the salad may last 1-3 days.

Our Watermelon Cucumber Feta Salad recipe is a refreshing toss of juicy ripe watermelon, Persian cucumbers, heirloom cherry tomatoes, red onion, Feta cheese, fresh mint and spring mix all tossed in a tasty lime mint vinaigrette.
Ingredients
- 4 cups watermelon, cubed and seeds removed
- 1-1/2 cups cucumber, sliced (Persian or English cucumber)
- 1 cup heirloom cherry tomatoes, sliced in half
- 1/4 cup red onion, sliced
- 2 cups spring mix, loosely packed
- 1/3 cup Feta cheese, crumbled
For the Lime Mint Vinaigrette
- 1/4 cup lime juice
- 1 clove garlic, smashed, peeled and minced
- 2 tablespoons plus 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 2 tablespoons fresh mint leaves, finely chopped
- 1/2 teaspoon kosher salt
- 1/2 cup extra-virgin olive oil
Instructions
- Whisk together the ingredients for the vinaigrette and transfer to an airtight container. You can also add the ingredients to a mason jar, seal the lid and vigorously shake to blend the ingredients. Refrigerate until you're ready to serve.
- Add the cubed watermelon, cucumber slices, cherry tomatoes, onion and spring mix to a large bowl and toss.
- Drizzle the dressing over the salad and toss. Sprinkle the feta cheese over the top of the salad and garnish with mint leaves and serve.
