STRAWBERRY SALAD RECIPE

This is a basic kale quinoa salad that adds a taste of summer with fresh strawberries.

  • 6 cups fresh baby kale
  • 2 cups Romaine lettuce, chopped
  • 1 cup cooked quinoa
  • 1 pint strawberries, hulled and sliced
  • ¾ cup chickpeas
  • 1 small cucumber, peeled, seeded, cut in half and sliced
  • half a small red onion, cut in half and thinly sliced
  • strawberry dressing(recipe below)

VARIATIONS 

  • Add roasted walnuts, pecans or sliced almonds
  • Add feta cheese
  • Add Avocado
  • Add celery for crunch
  • Add poppy seeds to the dressing
  • Use baby spinach or Romaine lettuce instead of kale
  • Add basil ribbons
  • Add blueberries

HOW TO MAKE STRAWBERRY SALAD

I love healthy summer salads like this one.  They’re quick and easy to make, and they make great use of summertime produce.

Make the Strawberry Salad Dressing

  1. Blend the ingredients in a blender or food processor. 
  2. Pour into a glass container with a lid and refrigerate before using.

Toss the Salad:  

  1. Toss the salad ingredients in a large bowl. 
  2. Drizzle the strawberry dressing over the salad ingredients and toss to lightly coat

STRAWBERRY SALAD DRESSING

  • 1 -1/2 cups fresh strawberries, stems discarded and cut in half
  • 2 tablespoons lemon juice
  • 2 tablespoons pure maple syrup (or honey)
  • 1/4 cup extra-virgin olive oil
  • salt and freshly ground black pepper

The vinaigrette ingredients are all tossed in a blender or food processor and blended until smooth and creamy.  It really is so good, you could drink it!

Instructions

  2. Season with salt and freshly cracked black pepper
