Quinoa Strawberry Salad
This summer Quinoa Strawberry Salad is loaded with kale, quinoa, fresh strawberries, chickpeas, onion and cucumber, and it’s all tossed in delicious fresh strawberry vinaigrette that’s so good you’ll want to drink it! This salad with strawberries is one of my favorite healthy summer salads to make!

This salad is fresh, light and nutritious and it’s tossed in a delicious whole strawberry vinaigrette (made with fresh strawberries). It’s one of those healthy summer salad recipes you’ll want to make time and time again!
Summer Strawberry Salad Recipe
This salad makes a delicious light main salad, or serve it with grilled chicken or fish.
- Leafy greens – we use a mix of Romaine lettuce and kale, but you could use all kale or all Romaine.
- Cooked quinoa – I used white quinoa for this recipe, but you could use tri-color if you like. This is the recipe for How to Cook Quinoa so it turns out perfectly fluffy every time.
- Fresh strawberries – Pick the sweetest and juiciest you can find at the store.
- Chickpeas – these add some plant protein to go with the quinoa, making this a really nutritious salad.
- Cucumber – they add a nice crunch to this summery salad.
- Red onion – I always slices my onion then soak the slices in a cup of water while I prepare the other ingredients for the salad. Soaking onions for a few minutes will mellow the flavor quite a bit.
- Strawberry dressing – We use fresh (or frozen) strawberries to make a delicious creamy dressing for this salad.

How to Make Quinoa Strawberry Salad
I love healthy summer salads like this one. They’re quick and easy to make, and they make such good use of summertime produce.
- Make the Strawberry Salad Dressing: Blend the ingredients in a blender or food processor. Pour into a glass container with a lid and refrigerate before using.
- Toss the Salad: Toss the salad ingredients in a large bowl. Drizzle the strawberry dressing over the salad ingredients and toss to lightly coat. Season with salt and freshly ground black pepper to taste.
Strawberry Vinaigrette
This strawberry vinaigrette recipe is an easy one to make. Just toss all of the ingredients in a blender or food processor and blended until smooth and creamy. It really is so good, you could drink it!
- Fresh strawberries – we use fresh strawberries for this dressing, but you could use frozen.
- Lemon juice – a little lemon juice adds a little perkiness to the mix.
- Pure maple syrup (or honey) – this adds a little sweetness.
- Extra-virgin olive oil – I use extra-virgin olive oil, but you could also use avocado oil.
- Seasoning – sprinkle with salt and freshly cracked black pepper to taste.

Strawberry Salad
This summer Strawberry Salad is loaded with kale, quinoa, fresh strawberries, chickpeas, onion and cucumber, and it's all tossed in delicious fresh strawberry vinaigrette that's so good you'll want to drink it! This is one of my favorite healthy summer salads to make!
Ingredients
- 6 cups fresh baby kale
- 2 cups Romaine lettuce, chopped
- 1 cup cooked quinoa
- 1 pint strawberries, hulled and sliced
- ¾ cup chickpeas
- 1 small cucumber, peeled, seeded, cut in half and sliced
- half a small red onion, cut in half and thinly sliced
- strawberry dressing(recipe below)
For the Strawberry Vinaigrette
- 1 -1/2 cups fresh strawberries, stems discarded and cut in half
- 2 tablespoons lemon juice
- 2 tablespoons pure maple syrup (or honey)
- 1/4 cup extra-virgin olive oil
- salt and freshly ground black pepper
Instructions
- Toss the ingredients together in a bowl and add desired amount of Strawberry Vinaigrette. Serve right away.
For the Strawberry Vinaigrette
- Add the ingredients to a blender and blend well. Add more lemon juice and olive oil for desired consistency.
- Season with salt and freshly cracked black pepper

Any of these ingredients would be delicious add-ins to this salad!
