Coconut Curry Turkey and Quinoa Meatballs

These Coconut Curry Turkey and Quinoa Meatballs are rich, flavorful, aromatic and the combo of flavors going on here is amazing!!  They’re also quick and easy to make!

Serve these meatballs over rice or quinoa…. drizzle the sauce over the top and generously garnish with chopped cilantro and green onions.  If you like mushrooms, feel free to add a chopped mushroom or two  to the sauce as it simmers (just enough for added flavor).  And if you like a little spice….add just a teaspoon of minced jalapeño to the sauce as it simmer.   These meatballs are quite tender and they absorb this rich sauce nicely as they cook.  These meatballs could be served as an appetizer as well!
