Let’s get chip-faced, shall we!? When there are leftovers at work from a lunch meeting and the food is put in the kitchen for all to partake – I’ll dive in for a bag of barbecue potato chips over a cookie every time. I’m not big on sweets, and chips are the one weakness that I have. I won’t eat an entire bag of them – but I will savor a few bites. The oils in chips aren’t good – neither is all the sodium. These Pad Thai Nachos are a fun healthier alternative to your standard bad-oil and cheese-laden nachos. These chips are freckled with chia and flax seeds (I got them at my local health food store), they’re light on cheese, and topped with carrots, bean sprouts, cilantro and green onions. The chicken is tossed in a delicious creamy peanut sauce, and extra sauce is served to drizzle over the nachos. If you like Pad Thai, you’ll love these Chicken Pad Thai Nachos!
