Broccoli Detox SaladYum
This delicious Broccoli Detox Salad is tossed in a creamy light slightly sweet orange scented dressing that makes this salad completely addicting. Seriously! I promise!
This delicious fresh-tasting Broccoli Detox Salad is loaded with broccoli, blueberries, cranberries and onion, all of which help to detox the body and give a good boost the the immune system. The dressing is also chock-full of nutrient-dense ingredients such as apple cider vinegar (alkalizing), orange juice (antioxidant Vitamin C), orange zest (anti-inflammatory rutin) and plain Greek yogurt (Vitamin D).
The liver is our organ most responsible for removing toxins from the body and purifying the bloodstream. Having a healthy liver is critical to having a healthy body. If you Google the health benefits of broccoli, you’ll find one article or study after another touting the amazing health benefits and cancer prevention and fighting properties found in all cruciferous vegetables, but most abundantly in broccoli. It’s king. Broccoli has potent anti-inflammatory, anti-cancer and antioxidant benefits, and it contains nutrients that work with the enzymes in your liver that help to detoxify our bodies by turning toxins into something that our bodies can eliminate easily. Many people don’t like broccoli unless it comes hidden in a cheese sauce or dipped in a fattening artery clogging dip. But this salad makes eating your broccoli an easy thing to do in a healthy sort of way! It’s tossed is a light orange dressing that marinates the broccoli and mellows (okay hides) it’s naturally bitter taste.

Onions are of the allium family – related to garlic and scallions. Onions help to stimulate and facilitate detoxification and act as a powerful antioxidant, stimulating the immune responses and reducing inflammation.
One of the ingredients in the dressing for this skinny broccoli salad is orange zest (with orange juice) But I tend to add even more orange zest to the actual salad for the added pop of flavor, color and it actually is the healthiest part of the orange (organic of course). This article has some fascinating information about the benefits of orange peel. So grate it up finely and sprinkle it on top of all of your salads.
I hope I’ve given you enough reasons (besides flavor) for trying this salad. Apple is a good addition to this salad both for the sweetness and crunch, but I find that the apples can sometimes turn a little off color after awhile which takes away from the visual appeal. So if you want to add apple here, toss it first in some lemon juice to help keep it from turning brown. As for the nuts in this salad – I went with cashews because of their mellow flavor. Feel free to add almonds, walnuts or pecans instead if you prefer.
Broccoli Detox Salad
Yield: 6 servings
Total Time: 15 minutes
- 1-1/2 pounds organic broccoli, cut into bite sized pieces
- 1 cup fresh organic blueberries
- 1/4 cup red onion, finely chopped
- ½ cup dried cranberries
- 1/2 cup raw cashews
- zest from 1/2 large organic orange
For the Creamy Orange Dressing
- 3-1/2 tablespoons apple cider vinegar
- 1-1/2 teaspoon grated orange zest
- 2 tablespoons fresh squeezed orange juice
- 2-1/2 teaspoons Dijon mustard
- 2 tablespoons pure maple syrup (or honey)
- 2/3 cup light olive oil
- 3 - 4 heaping tablespoons plain Greek yogurt (if you have to use mayo - mix 1/2 mayo 1/2 yogurt), add more for extra creaminess if your prefer.
- Salt and freshly ground black pepper to taste
- Place broccoli, blueberries, red onion, cranberries, and cashews in a large bowl.
- Toss in dressing.
- Refrigerate for a few minutes before serving.
For the Creamy Orange Dressing
- Add all of the ingredients in a mason jar.
- Seal the lid tightly and shake vigorously until well blended.
